Such a wide variety of dishes – from light and aromatic to rich and substantial – requires an equally diverse range of wines to complement them. South Tyrol white wines range from fruity, creamy Chardonnays through full and spicy Gewürztraminer to vibrant, aromatic Sauvignon, while the reds may be light and fruity (Kalterersee and St. Magdalener), full-bodied with berry fruit flavours (Lagrein) or impressively elegant, exuding dark cherry and cassis aromas with subtle tannins on the palate (Pinot Noir).
A rich venison dish may cry out for a robust Nebbiolo, a plate of pasta with fresh tomato and basil is delicious with a glass of locally-grown Vernatsch, while the ideal asparagus wine is deemed to be an aromatic, lightly herbaceous Sauvignon from Terlan.
